1 garlic clove
2 centimeters fresh ginger
2 Tbsps butter
80 grams Cashews
1 l Vegetable broth
400 grams Peas (fresh or frozen)
2 sprigs mint
150 grams Crème fraiche
1 tsp Wasabi paste (to taste)
150 grams shrimp (shelled and deveined)
1 Tbsp lemon juice
salt

Preparation steps

Peel onion, garlic and ginger, chop small and sauté until translucent in a pot with butter. Add cashews and sauté briefly, add broth and stir in the peas. Simmer about 10 minutes. Rinse mint, shake dry, pluck and set a few leaves aside for garnish. Add remaining mint to the soup and puree. Continue to simmer a little longer or add broth to adjust consistency. Add 100 grams (approximately 3 1/2 ounces) crème fraîche and the wasabi, heat thoroughly, add shrimp and season with lemon juice and salt. Place in bowls, put the remaining crème fraîche on top and serve garnished with mint.
