60 grams butter
1 Cinnamon stick
1 tsp Coriander
1 tsp Turmeric
300 grams Long grain rice
600 milliliters Vegetable broth
salt
1 Tbsp dried garlic cloves
50 grams dried Apple ring
For Sauce
2 onions
40 grams clarified butter
2 dried garlic cloves (sliced)
dried Apple ring
1 dried Pepperoncini
1 Cinnamon stick
2 handfuls cilantro

Preparation steps

1.

Peel onion and chop finely. Heat butter in a pan and sauté cinnamon, coriander seeds and turmeric. Add rice and pour in broth. Season with salt, add garlic and coarsely chopped apple slices. Bring to a boil, reduce heat and simmer for about 20 minutes until all liquid is absorbed.

Peel onions and slice into rings. Heat butter in a pan and saute on high heat until browned. Add garlic and crushed apple slices. Combine peppercorns and halved cinnamon stick, add to sauce. Rinse and shake dry cilantro, pluck off leaves.

3.

Place rice into a round bowl, press down and invert on a plate. Top with cilantro and onion mixture and serve.
