Preparation steps

For the dough, mix flour with oil, 1 egg, salt and 100 ml (approximately 1 cup) of water in a bowl and knead with a kneading hook of a hand mixer until smooth. Place on a dusted work surface, knead again, wrap in plastic wrap and let rest for 1 hour.

Meanwhile, rinse mushrooms and chop. Rinse scallions and cut into rings. Rinse parsley, shake dry and chop leaves.

Cook bacon in a skillet over high heat without added fat. Add scallions and saute over medium heat for 2-3 minutes. Add mushrooms and continue cooking until all liquid has evaporated. Season with salt and pepper and stir in parsley and sour cream.

Use cotton cloth to transfer filled roll to a baking sheet lined with baking paper. Place seam side down. Separate egg and whisk egg yolk with milk. Brush onto dough and bake in a preheated oven at 180°C (approximately 350°F) until golden brown, about 40-50 minutes. Slice to serve.
