125 grams Mozzarella (1 ball)
1 shallot
2 garlic cloves
1 Tbsp olive oil
salt

1 pinch Nutmeg
400 grams Puff pastry dough (rectangular shape)
1 egg (separated)
20 stems Chives

Preparation steps

Trim the spinach, rinse and add dripping wet to a pot. Cook until wilted. Pour into a colander, drain well and chop. Drain mozzarella and cut into 20 pieces.

Peel shallot and garlic and finely chop. In olive oil, sauté the garlic and shallot with spinach and season with salt, pepper and nutmeg to taste. Remove from heat and let cool slightly. Preheat the oven to 200°C (approximately 400°F).

Roll out the puff pastry and cut into 20 rectangular pieces. Top each with 1 teaspoon spinach it and put a piece of mozzarella on each. Brush edges with egg white and fold over the filling. Coat the dough pieces lightly with egg white and fold outside edges towards the center.

Place the balls on a parchment-lined baking sheet. Whisk the egg yolk and brush the pastry with it. Bake in preheated oven until golden brown, 12-15 minutes. Remove from oven and allow to cool slightly.

5.

Meanwhile, blanch the chives in boiling water, remove them quickly, shock in ice water and pat dry. Tie each pastry with a chive stem and serve.
