1 pinch sugar
5 Tbsps olive oil
500 grams Cherry tomatoes (red and yellow)
500 grams Mozzarella
½ honeydew melon

Preparation steps

1.

Rinse the chives, pat dry and cut into small rings.

For the vinaigrette, combine the balsamic vinegar with the oil and season with salt, pepper, sugar and chives.

Rinse the tomatoes and rub dry. Drain the mozzarella.

Halve the melon, remove the seeds and scoop out small balls from the flesh with a melon baller; you should end up with about 350 grams of melon balls (approximately 12 ounces).

Repeat the process with the mozzarella.

Mix all the balls together in a large bowl with the vinaigrette and leave for at least 20 minutes.

Transfer to small bowls or colorful cups and serve with skewers.
