12 cups Spinach (washed)
1 cup Ricotta cheese
2 ¼ cups Crème fraiche
3 Tbsps Blue cheese (crumbled)
1 Tbsp milk
12 Lasagne noodle
¾ cup Pine nuts (lightly toasted)
¾ cup Parmesan
Nutmeg (grated)

Preparation steps

1.
Preheat the oven to 180°C | 350F | gas 4.
2.
Wilt the spinach in a large pan with a splash of water. When wilted down, tip into a sieve and press down firmly with a wooden spoon, extracting as much liquid as possible. Leave to cool.
3.
Mix the ricotta with the spinach and some seasoning and 1 tbsp olive oil.
4.
Mix together the creme fraiche, blue cheese and careful seasoning and loosen with a splash of milk to make a sauce.
5.
Spread a tbsp in the bottom of a baking dish, then top with 4 lasagne sheets.
6.
Spoon over the spinach mixture, then scatter with some pine nuts and Parmesan.
7.
Repeat twice, finishing with a layer of pasta. Spoon the creme fraiche sauce over the top, drizzle with oil and bake for 45-50 minutes until all is tender, golden and bubbling.
8.
Leave to stand for 10 minutes before serving.
