250 grams Spinach (refrigerated)
250 grams white bread (day-old)
3 Tbsps
1 pc Mountain cheese (40 grams, such as Gryuere)
½ onion
1 garlic clove
3 Tbsps butter (45 grams)
1 egg
salt

1 Tbsp Walnut (15 grams)

Preparation steps

1.

Cook spinach according to package instructions in a little water. Cool, place into a cheese cloth and drain well. Squeeze and chop coarsely (there should be about 125 grams of spinach left) (approximately 4 1/2 ounces).

Cut bread into 1/2 cm cubes (approximately 1/5 inch). Combine in bowl with milk. Grate 20 grams (approximately 2/3 ounces) of cheese coarsely, grate the rest finely. Peel onion and garlic and chop finely.

Heat 1 tablespoon of butter in a pan. Saute onion and garlic until soft. Combine with spinach,egg, finely grated cheese and bread and season with 1/2 teaspoon of each salt, pepper and freshly grated nutmeg.

With moistened hands, shape 8 dumplings out of spinach mixture. Cook in boiling salted water for about 12-15 minutes on low heat (or prepare in a steamer). 

5.

Coarsely chop nuts. Melt remaining butter in a saucepan. Remove dumplings with a slotted spoon and arrange on plates. Drizzle with melted butter, sprinkle with nuts and remaining cheese. Serve.
