Rinse and spin dry spinach. Rinse raisins and soak in sherry. Rinse apples, quarter and core, cut into thin slices.

Heat 2 tablespoons of oil in a pan and roast apple slices for 3-4 minutes or until light golden brown. Remove from heat. Combine with spinach, pine nuts, remaining oil and raisins with sherry. Season with salt, lemon juice and pepper. Arrange on plates and serve.
