- 1 shallot
- 1 garlic clove
- 50 grams Leeks (rinsed and cut into small pieces)
- 2 potatoes
- 1 Vegetable broth
- 40 grams Spinach
- 40 grams Lettuce
- 40 grams Sorrel
- 40 grams Dandelion greens
- 25 grams Chervil
- 25 grams Chives
- 25 grams parsley
- salt
- freshly ground peppers
- Fresh herbs (for garnishing)
Preparation steps
1.
Peel shallot, garlic and potatoes. Combine all vegetables with leek in a pot, add vegetable broth and bring to a boil. Reduce heat and simmer for about 25 minutes or until all vegetables are soft.
2.
Add spinach and all herbs and simmer for 5 more minutes. Remove soup from heat, puree and season with salt and pepper. Pour into bowls and serve.
