3 garlic cloves (finely chopped)
3 cups Mushrooms (sliced)
1 green pepper (sliced)
1 red pepper (sliced)
4 Tomatoes (sliced)
4 Tbsps chopped parsley
2 Tbsps butter
pecorino romano (grated)

Preparation steps

Cook the pasta in boiling salted water until al dente.

Heat the oil in a pan and fry the garlic. Add the mushrooms and the peppers and cook on a medium heat for 3-4 minutes. Stir in the tomatoes and cook for a few minutes. Season with salt and ground black pepper.

Drain the pasta and mix into the vegetable mixture. Stir in the parsley and the butter and serve immediately with grated pecorino.
