½ cup Parmesan (shaved)
¼ cup olive oil
1 cup Green beans (trimmed, blanched and chopped)
2 Plum tomato (finely diced)
¼ cup extra-virgin olive oil
½ lemon (juiced)
1 Tbsp parsley (finely chopped)

Basil (to garnish)

Preparation steps

1.
In a small mixing bowl, marinade the tomato in the extra-virgin olive oil, lemon juice and some seasoning. Reserve to one side until serving.
2.
In a large mixing bowl, combine the penne pasta, green beans, olive oil, chopped parsley and seasoning.
3.
Arrange the pasta salad in serving bowls and top with shaved Parmesan, some of the marinated tomatoes and sprigs of parsley and basil.
