1 bunch Arugula (about 80 grams)
2 onions
2 Tbsps vegetable oil

8 small Steak fillet (each about 80 g)
60 grams Mayonnaise
1 Tbsp grainy Mustard

Preparation steps

1.

Rinse the peppers, cut in half and remove the seeds and white membranes. Place the pepper halves with skin sides up on a parchment paper-lined baking sheet. Broil for about 10 minutes until the skins begin to turn black. Remove from the oven and cover with a damp tea towel. Allow to cool and remove the skin.

Toast the bread slices on both sides under the broiler.

Meanwhile, rinse the arugula and spin-dry. Peel the onions and cut into rings. Heat 1 tablespoon oil in a pan, saute the onions until golden brown about 8 minutes, stirring occasionally. Season with salt and pepper.

Rinse the steaks with cold water, pat dry and season with salt and pepper. Heat the remaining oil in another pan, and sear the steaks on each side for about 2 minutes. Remove from the heat and let stand to reach the desired degree of doneness.

5.

Top 4 slices of bread with arugula and pepper halves and top each 2 steaks. Mix the mayonnaise and mustard and add to the steaks. Top with the onions and remaining bread slices and serve.
