- For the muffins
- 2 ¼ cups self-rising flour
- 1 cup sugar
- 5 tsps ground cinnamon
- ½ cup sunflower oil
- 2 eggs
- ¾ cup milk
- 1 Apple (peeled, cored & diced)
- ½ cup light brown sugar
- For the glaze
- ⅛ cup butter (melted)
- 4 Tbsps light corn syrup
- 2 Tbsps light brown sugar
Preparation steps

For the muffins: heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 12 hole muffin tin.

Sift the flour, sugar and 1 teaspoon cinnamon into a mixing bowl.

Mix together the oil, eggs and milk until combined. Stir into the dry ingredients until only just combined. Gently fold in the apples.

Mix together the brown sugar and remaining cinnamon.

Spoon the cake mixture into the tins to cover the bases. Add 1 heaped teaspoon of cinnamon sugar to each tin and then spoon in enough mixture to just cover the sugar. Repeat with another teaspoon of cinnamon sugar and then finish with the remaining cake mixture.

Bake for 20-25 minutes until golden and risen.
7.
For the glaze: heat the butter, golden syrup and sugar in a pan, stirring until melted. Brush the glaze over the warm muffins, repeating as the glaze sinks into the muffins.
