- 24 ozs Beef fillet
- 1 Tbsp Corn starch
- 2 Tbsps cold water
- 2 Tbsps Rice wine
- salt (to taste)
- fresh ginger (about 1 1/2-inches)
- 1 clove garlic cloves
- 2 Tbsps toasted sesame oil (to taste)
- 1 Tbsp soy sauce
- 2 Tbsps Oyster sauce
- freshly ground Black pepper (to taste)
- 1 pinch granulated sugar

1 Cutting board, 1 Small knife, 1 Large knife, 2 Pots, 1 Slotted spoon, 1 Wooden spoon, 1 Baking sheet, 1 Brush, 1 Rubber spatula, 1 Measuring cups, 1 Tablespoon
Preparation steps

Rinse the green onions and shake dry. Cut into pieces 2 1/2-inches long. Set aside.

Rinse the beef under cold running water and pat dry with paper towels. Cut into very thin slices.

In a small bowl, combine the cornstarch and cold water. Stir in 1 teaspoon rice wine and a pinch of salt. Drizzle mixture over the beef and toss to coat; marinate for 20 minutes.

Peel and finely chop the ginger and garlic.
5.
Heat the oil in a wok and stir-fry the beef until cooked through. Add the green onions, ginger and garlic and fry briefly. Deglaze the wok with the remaining rice wine, soy sauce and oyster sauce. Season with pepper and sugar. Serve.
