3 Tbsps light soy sauce

Thaw frozen seafood according to package instructions.

Meanwhile, halve leeks lengthwise, rinse well, drain and cut into 1 cm (approximately 1/2-inch) wide strips.

In a pot, bring salted water to a boil. Cook leeks and bean sprouts in separate batches for 1 minute each. Drain, rinse under cold water and drain well.

Drain baby corn and cut in half lengthwise. Rinse snow peas, drain and cut in half crosswise.

Rinse and drain bok choy, halve lengthwise and cut into wide strips.

Peel the garlic and chop finely. Rinse chile pepper, cut in half, remove the ribs and seeds, if desired, rinse again and finely chop.

Rinse thawed seafood in cold water, drain and pat dry with paper towels.

Heat the oil in a wok or large skillet. Stir-fry garlic and chile for 1 minute. Add seafood and stir-fry for about 5 minutes.

Add snap peas, corn, bok choy and leek to the to wok and stir-fry for another 3 minutes, then stir in the sprouts.
