Stir-Fried Beef with Broccoli and Peppers

Beef is a great source of protein, and the broccoli and peppers provide additional nutrients that are extremely important for body functions.
You can always use chicken instead of beef if you are trying to limit red meat or fat.

- 8 ozs Long grain rice
- salt
- 22 ozs Beef fillet
- 3 Bell pepper (red, yellow, green)
- 1 small head Broccoli
- ½ inch fresh ginger
- 1 garlic clove
- 2 Tbsps sesame oil
- 1 Tbsp dark soy sauce
- 1 Tbsp Oyster sauce
- 1 generous pinch Sambal oelek
Preparation steps
Cook rice in 4 cups of boiling salted water for about 25 minutes.
Rinse meat, pat dry and cut into thin strips. Rinse bell peppers, halve and remove seeds and ribs. Cut into thin strips. Rinse broccoli and separate florets from stems. Peel stalks and cut into small cubes. Blanch broccoli florets and stem cubes for 5 minutes in boiling salted water, drain and rinse under cold water.
Peel and finely chop ginger and garlic.
Heat oil in a wok and stir-fry beef, stirring vigorously. Remove beef from wok. Add ginger and garlic and sauté until fragrant. Add remaining vegetables. Saute for 3-4 minutes, stirring occasionally. Return meat to wok and mix with vegetables. Add soy sauce, oyster sauce and sambal oelek. Spread rice on plates, top with beef and vegetables and serve immediately.
