600 grams lean Pork
2 Tbsps Tomato paste
100 grams Cucumber
80 grams Leeks
1 Tbsp ginger (freshly grated)
2 garlic cloves
1 egg
1 Tbsp cornstarch (dissolved in water)
1 Tbsp sugar
1 Tbsp Vinegar
1 Tbsp Rice wine
1 salt
freshly ground peppers
300 milliliters vegetable oil

Preparation steps

1.

Cut the meat into thin strips, season with a little salt and mix with a little of the rice wine, beaten egg and some of the cornstarch mixture.

Halve cucumber lengthwise and cut into thin slices. Rinse the leeks, trim, cut in half lengthwise and cut into about 3 cm (approximately 1-inch) long pieces.

Mix sugar, vinegar and salt (to taste) with the remaining rice wine and cornstarch solution.

4.

Heat the oil in a wok and stir-fry pork over medium heat and remove. Add about 3 tablespoons oil and stir in the tomato paste, cucumbers, leeks, ginger and pressed garlic. Stir-fry briefly, add the meat and stir to combine before serving.
