½ whole lemon (juiced)
1 egg
2 egg yolks
80 grams sugar
1 packet Vanilla sugar
350 milliliters Whipped cream

Preparation steps

Rinse, trim and puree the strawberries with the lemon juice.

Beat the egg yolks, sugar and vanilla sugar until creamy over a hot water bath (not boiling water). Remove from heat, then beat over a cold water bath and stir the strawberry puree. Beat the cream until stiff and fold into the mixture. Process in an ice cream machine or freeze in a container for 5 hours, stirring occasionally.
