- 500 grams Strawberries
- 1 Lime
- 5 sheets gelatin
- 250 grams Whipped cream
- butter (for molds)
- fresh mint
Preparation steps
Rinse strawberries, put 150 grams aside (approximately 2/3 cup, chop the rest, puree and strain through a sieve. Soak the gelatin in cold water and dissolve dripping. Place in a small saucepan over low heat. Add strawberry puree, then mix. Use 4 ramekins and pour in the strawberry puree. Place in the refrigerator. Place the rest of puree in a bowl and refrigerate until it begins to gel. Whip cream until stiff and fold into the strawberry puree. Fill in the ramekins and place in refrigerator for three hours.
Cut the remaining strawberries into slices. Take some lime zest, squeeze the lime and spread the strawberry slices on plates. Drizzle with 2 teaspoons lime juice and garnish with zest. Put strawberry mousse briefly in hot water and place on the strawberries. Garnish with mint leaves.
