3 Tbsps honey
2 egg whites
200 grams Quark
100 grams Crème fraiche
1 tsp organic Lemon peel
Lemon balm (for garnish)

Preparation steps

1.

Rinse strawberries, trim, pat dry, cut in half and set a few aside for garnish. Puree remaining strawberries with honey using an immersion blender. Beat egg whites. Add quark, creme fraiche and lemon zest to strawberry puree. Fold in egg whites, pour into small dessert bowls and chill for 1 hour.

2.

To serve, top each bowl with a reserved strawberry and garnish with lemon balm.
