1 Red onion (chopped)
4 Vine Tomatoes (chopped)
2 Tbsps extra virgin olive oil

Preparation steps

1.
Cook the potatoes in a large saucepan of salted, boiling water until tender; 15 - 18 minutes.

Remove with a slotted spoon to a bowl of iced water. Add the beans to the saucepan of water and cook for 3 minutes. Drain well and refresh with the potatoes.
3.
Once the potatoes are cold enough to handle, roughly chop and toss with the beans, onion, tomatoes, olive oil, and seasoning in a mixing bowl.
4.
Divide between bowls and serve.
