2 Cucumber
1 Tbsp olive oil
1.333 cups Mushrooms
1 red pepper
1 clove garlic cloves
cup ham (cut into strips)
0.333 cup black Olives (stones removed)
½ cup fresh Mozzarella
salt
freshly ground peppers
½ cup Walnut (chopped)
1 Tbsp fresh parsley (chopped)

Preparation steps

1.
Preheat a fan oven to 200°C. Brush the baking tray with oil.

Peel the cucumber, cut in half lengthways and scoop out the seeds. Clean the mushrooms thoroughly and cut into slices. Wash the pepper, cut in half, remove the seeds and the white membrane and dice finely. Peel and finely chop the garlic. Cut the ham into strips, chop the olives and dice the mozzarella cheese.

Mix the mushrooms with the pepper, garlic, ham, olives and mozzarella cheese. Season with salt and pepper. Fill the cucumbers with the mixture and place in the hot oven for about 20 minutes to bake.
4.
Garnish with chopped walnuts and parsley and serve.
