800 grams mixed Ground meat (pork, beef, lamb or veal)
1 onion
20 grams butter
1 day-old kaiser roll
1 egg
2 Tbsps Tomato paste
1 tsp Mustard
1 jar Mixed pickles
salt
freshly ground peppers (from the mill)
Remoulade (at room temperature)
250 grams olive oil
2 egg yolks
2 Cornichons
1 onion
1 Tbsp Caper
1 hard-boiled egg
salt
freshly ground peppers (from the mill)
2 Tbsps finely chopped parsley

Preparation steps

Place the bread in water to soak. Peel and finely chop the onion and sauté in butter, then combine in a bowl with soaked bread, egg, tomato paste and mustard, and season with salt and pepper. Form half of mixture into a loaf shape. Arrange some of the sliced pickles along loaf, then top with remaining meat mixture, forming into a loaf. Place in a greased roasting pan and cook in preheated oven at 180°C (approximately 350°F) for about 60 minutes. Serve with more pickles and remoulade sauce (see below).

For the sauce, lightly beat egg yolks, season with salt and pepper and then slowly whick in the oil until sauce is creamy. Finely chop cornichons and capers. Peel and finely chop the onion and hard-boiled egg. Add chopped ingredients to the egg yolk mixture along with parsley and mayonnaise.
