Ingredients
- For the dough
- 1 cube fresh Yeast
- 250 milliliters lukewarm milk
- 500 grams Pastry flour
- ½ tsp salt
- 1 pinch sugar
- 40 milliliters olive oil
- For the filling
- 2 Tbsps black, pitted Olives
- 1 sprig rosemary
- 2 sprigs thyme
- 1 red chili pepper
- 250 grams freshly grated Parmesan

Preparation steps
For the dough, dissolve yeast in lukewarm milk. In a bowl, mix flour with salt and a pinch of sugar, and create a well in the middle. Add yeast-milk and oil to the well and knead with hands until smooth. Let rest one hour in a warm, quiet place. For the filling, drain olives well and finely chop.
Rinse chile pepper, cut lengthwise, remove seeds and finely chop. Rinse herbs, shake dry and chop. Mix olives, chile peppers and herbs with Parmesan. Preheat the oven to 180°C (approximately 350°F). Knead the dough on a floured work surface again and divide into 3 equal portions.
From each small 50 grams (approximately 2 ounces) portion of dough, flatten slightly and place filling on top. Form into bun and place on a baking sheet lined with parchment paper and cut crosswise. Bake in preheated oven for 25-30 minutes. Remove and serve on a plate garnished with fresh herbs.
