- 2 large Tomatoes
- 2 Papaya
- ½ cup olive oil
- 1 onion (finely diced)
- 4 cloves garlic cloves (minced)
- 2 Tbsps cilantro (chopped)
- salt
- freshly ground Black pepper
- Mace
- 1 cup grated Cheese (Gruyère)
- 1 Tbsp breadcrumbs
- 1 Tbsp butter
- cilantro (to garnish)
- 1 Tortilla chip (bought)
Preparation steps

Pour boiling water over the tomatoes, skin, deseed and dice. Wash the papayas, cut in half lengthwise and deseed. Scoop out the flesh with a sharp spoon, leaving a rim about 1 cm thick. Dice the papaya flesh.

Sweat the onion and garlic in 4 tbsp oil until translucent. Stir in the diced tomatoes and papaya and stew for a few minutes. Season to taste with salt, pepper and mace, then mix with the grated cheese, breadcrumbs, butter, chopped coriander and the rest of the olive oil.

Pile the mixture into the papaya halves, place in a greased baking dish and bake in an oven preheated to 200°C | 400F | gas 6 for about 20 minutes.

Garnish with coriander leaves and serve with tortilla chips.
