- 1 ½ cups coconut sugar
- ⅜ cup cream (48% fat)
- 1 cup unsalted butter (scant)
- 3 Banana (sliced)
- 7 ozs sugar-free white chocolate
- 1 egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ¼ tsp Baking powder
Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Grease a 23cm|9" square baking tin and line the base with non-stick baking paper.

Heat 100g|1/2 cup sugar, the cream and 100g|1/2 cup butter in a pan juntil the sugar has dissolved. Bring to a boil and cook for 5 minutes to form a thick sauce. Set aside to cool slightly.

Melt the chocolate and remaining butter in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and set aside.

Add the bananas to the cream sauce.

Whisk the egg with the remaining sugar and vanilla in a mixing bowl until well blended, then fold in the chocolate mixture.
6.
Sift in the flour and baking powder and fold in gently. Add the banana mixture.
7.
Spoon into the tin and bake for about 35 minutes until just set and still a little soft in the centre. Cool in the tin then cut into squares.
