72 ozs Cherry tomatoes

4 garlic cloves
8 fresh bay leaves
8 ozs olive oil (approx.)

Preparation steps

Wash herbs, shake dry, and chop finely. Wash tomatoes, cut them in half, and place them on a baking tray lined with baking paper. Sprinkle with salt, pepper, and herbs and dry in a preheated oven at 110 °C /215 °F for about 6-8 hours with a wooden spoon stuck in the oven door, turning the tomatoes over about every 30 minutes. They should be pliable, not too tough, but also no longer too moist.

Remove tomatoes from oven and let cool. Meanwhile, wash thyme, shake dry and pluck off leaves. Peel and halve the garlic.

Layer the thyme, garlic and bay leaves with the tomatoes in clean jars. Fill with oil and leave to infuse, tightly sealed, for about 1 week.
