4 large Sweet potato (peeled and cubed)
¼ tsp salt
3 Tbsps butter (unsalted)
3 Tbsps half and half cream
2 Tbsps Sour cream
salt (to taste)
peppers (to taste)
4 tsps fresh Sage (chopped)
2 eggs
flour
vegetable oil (for frying)

Preparation steps

1.
Cook sweet potatoes in a large pot of boiling salted water until tender, 25 to 30 minutes.

Remove from heat. Add butter, half and half, sour cream, salt and pepper and mash potatoes. Stir in the sage. Set aside.
3.
Beat the 2 eggs in a shallow bowl. Place flour in a glass pie plate. Form sweet potatoes into patties. Dip both sides in egg and then both sides in the flour.
4.
When all patties have been made. Heat oil (about 1” depth) in a large, deep skillet over medium heat. Working in batches fry the sweet potato cakes until golden on both sides, about 2-3 minutes per side.
5.
Move to paper towels to drain excess oil. Serve immediately.
