The sweet potato, which was considered exotic just a few years ago, has become an indispensable part of the vegetable department. It is not only incredibly versatile, but also contains some of the vital substances that are healthy for us. Potassium is responsible for a balanced fluid balance and can therefore have a positive effect on blood pressure. Various secondary plant substances protect the body cells from oxidative stress and thus inhibit inflammation.
Freshly chopped herbs spice up the delicious oven dish before serving. The gratin is accompanied by a crisp leaf salad with honey-mustard dressing, strips of pepper and slices of cucumber.
If there is anything left over, the gratin can be quickly warmed up in the oven. We recommend that you cover the dish during this time so that the cheese does not brown too much.

- 800 grams Sweet potato
- 300 milliliters Whipped cream
- 50 grams freshly grated Cheese (such as Mozzarella, Gruyere)
- 50 grams Crème fraiche
- 1 Tbsp scallions
- 1 tsp Curry powder
- salt
- freshly ground peppers
- butter (for the pan)
- 50 grams Goat cheese
Preparation steps
Preheat the oven to 180°C (approximately 350°F). Peel the sweet potatoes, rinse and cut into thin slices. Mix the cream, grated cheese, creme fraiche, chives, curry and season with salt and pepper.
Layer the sweet potato slices in a buttered baking dish and pour the curry cream on top. Cut the goat cheese into cubes and sprinkle over the top. Bake for about 45 minutes. Serve immediately.
