250 grams Rice

1 Vanilla bean
2 Tbsps sugar
500 grams mixed Berry (as desired)
1 Star fruit
1 Lime

Preparation steps

1.

Sauté rice in butter. Add milk, vanilla bean and sugar to rice, bring to a boil and simmer over low heat for about 15 minutes.

Remove vanilla bean from rice. Let rice cool slightly, spoon into four small greased ring molds and press gently. Invert molds and remove rice rings onto serving plates. Rinse berries and pluck or hull as necessary. Rinse star fruit and lime and cut into slices.

3.

Arrange berries in centers of rice rings. Garnish rice rings with mint leaves and lime and star fruit slices. Serve rice rings with vanilla sauce if desired.
