3 ½ ozs Dark chocolate (70% cocoa solids, chopped)
1 tsp vanilla extract
2 tsps plain Yogurt
4 egg yolks
2 Tbsps sugar (plus extra for the ramekins)
6 egg whites
1 Tbsp all-purpose flour

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Butter 6 ramekins and sprinkle with sugar.
2.
Put the chocolate, vanilla and yoghurt into a heatproof bowl. Melt slowly over a pan of simmering (not boiling) water, then set aside to cool.
3.
Beat the egg yolks with the sugar until creamy, then slowly pour in the melted chocolate, beating constantly.
4.
Sift the flour over the mixture and fold in gently.
5.
Whisk the egg whites until stiff, but not dry and fold in carefully.
6.
Divide the mixture between the cups and bake for about 15 minutes, until risen and puffy. Do not open the oven door while they are baking.
