- 1 ⅔ cups Cookie (digestive)
- 1 cup unsalted butter (melted)
- 2 ½ cups cream cheese (softened)
- ½ cup superfine caster sugar
- 2 Tbsps all-purpose flour
- 1 cup Milk chocolate (chopped)
- 2 tsps Instant Coffee powder (dissolved in 2 tbsp hot water)
- 2 medium eggs
- 1 cup Cherries
Preparation steps

Pulse together the crushed biscuits and melted butter in a food processor. Tip into a 20 cm | 8" fluted tart tin.

Press well into the base and sides of the tin and chill until needed. 1 Preheat the oven to 150°C(130° fan)|300F|gas 2.

Beat together the cream cheese, sugar, and flour in a mixing bowl until smooth; 3 minutes.

Melt the chocolate in a heatproof bowl set over a half-filled saucepan of simmering water. Beat into the cream cheese and then beat in the coffee liquid and the eggs, one by one, until smooth.

Pour into the chilled biscuit base and sit the tin on a large piece of aluminium foil. Bring the foil up and around the tin and place in a roasting tray. Pour in enough boiling water to come half way up the sides of the tin.

Bake for 1 hour until the cheesecake is set. Remove from the oven and leave it to cool to room temperature.
7.
Chill for 4 hours. Turn out, slice, and serve with a garnish of cherries.
