- 11 ozs Puff pastry (frozen, thawed)
- 3 Tbsps butter (melted)
- 0.333 cup sugar
- 1 tsp vanilla extract

Preheat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Brush the pastry sheets with melted butter apart from one. Place the sheets on top of each other with the unbuttered sheet on top. On a lightly floured surface, roll the pastry out to a 30 x 30 cm square and brush the surface with a little melted butter.

Mix the sugar and vanilla essence. Sprinkle half the sugar onto the pastry. Fold the dough twice and place in the fridge for approx. 30 minutes.

Cut approx. 5 mm thick slices of pastry. Pull them apart slightly and press one side in the remaining sugar.

Place with the sugared side up on a baking tray lined with baking parchment and bake for 15-20 minutes. Remove from the oven and let cool. Serve with a cup of coffee.
