- 500 grams Tagliatelle
- salt
- 2 carrots
- 1 bunch flat-leaf parsley
- 4 Tbsps olive oil
- 1 packet Frozen mirepoix blend
- 2 Tbsps Caper
- peppers
- 50 grams Edam cheese
- 80 grams Turkey sausage
Preparation steps

Cook tagliatelle in plenty of boiling salted water according to the package instructions until al dente, reserving at least 1 cup of cooking liquid. Peel the carrot and slice lengthwise with a peeler into thin strips. Rinse parsley, shake dry, pluck the leaves and chop coarsely. Thaw the mirepoix blend.

Heat olive oil in a large, nonstick skillet. Saute the carrots and mirepoix blend for 2-3 minutes. Add 1 cup pasta-cooking water and the capers. Season with salt and pepper. Cover the pan and cook for another 4 to 5 minutes.

Finely dice the Edam cheese. Cut turkey sausage into strips. Toss the tagliatelle with the capers mixture. Stir in the Edam cheese, turkey sausage and parsley. Serve immediately.
