- For the cupcakes
- ⅔ cup butter
- 1 ¼ cups powdered sugar
- 3 eggs
- ½ tsp vanilla extract
- ½ cup self-rising flour
- ½ cup Almond flour
- 2 ½ Tbsps Corn starch
- For the decoration
- 1 cup unsalted butter
- 1 ¾ cups powdered sugar
- ½ tsp vanilla extract
- pink Food coloring
- yellow Food coloring
- Sugar flower
- small, colored Candy
- pink colored sparkling sugar

For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in a 12 hole bun tin.

Beat the butter with the icing sugar, eggs and vanilla until light and fluffy. Stir in the flour, ground almonds and cornflour.

Spoon the mixture into the paper cases and bake for about 15 minutes (Test to see if they are done by inserting a cocktail stick - it should come out clean). Remove from the oven, leave to cool slightly in the tins, then place on a wire rack to cool completely.

For the decoration: beat the butter in a bowl until soft. Sift in the icing sugar and beat well. Stir in the vanilla.
5.
Divide the mixture into 3. Stir pink food colouring into 1/3 and yellow colouring into another 1/3, leaving 1/3 white.
6.
Spread the buttercreams over the cakes. Decorate with sugar flowers, sweets and sparkling sugar.
