- 2 ¼ cups gluten-free self-rising flour
- 1 tsp gluten-free Baking powder
- ¼ cup butter
- ¼ cup caster sugar
- 1 egg
- ⅔ cup milk
- 0.333 cup dried Cranberry
- ½ Tbsp chopped thyme
Preparation steps

Heat the oven to 220°C (200° fan) 425°F gas 7. Grease a baking tray.

Sift the flour and baking powder into a bowl. Rub in the butter until the mixture resembles fine breadcrumbs, then stir in the sugar.
3.
Lightly beat together the egg and milk. Add to the flour mixture and beat until smooth. Stir in the cranberries and thyme.
4.
Scoop 7-9 mounds of the mixture on to the baking tray. Brush lightly with egg.
5.
Bake for 15-18 minutes until light-golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
