- 4 large, green Tomatoes
- 150 grams Rice flour (or 75 g wheat flour and 75 g wheat starch)
- 2 egg whites
- ½ tsp Curry powder
- 1 l vegetable oil (for frying)
- 60 grams Rice flour (to coat)

1.
Rinse the tomatoes, cut out the stalk and cut into slices (not too thin).

Place the rice flour into a bowl. Whisk in the egg whites, 1/2 teaspoon salt and curry powder. Add about 200 ml (approximately 2/3-3/4 cup) cold water and mix form to a smooth batter.

Heat the oil in a medium saucepan or in a deep fryer to about 170°C (approximately 325°F).
4.
Coat the tomato slices in the additional rice flour, tap off excess flour and dip them in the batter. Let excess batter drip off and fry in portions carefully in the hot oil. Fry for 3-4 minutes until evenly golden brown and then remove with a slotted spoon. Drain and place on paper towels.
5.
Serve with assorted dips.
