- For turkey
- 190 ozs Turkey (trimmed)
- 3 Tbsps butter (softened)
- 4 tsps salt
- 2 tsps peppers
- fresh Chives (snipped)
- For oven roasted vegetables
- 9 cups new potatoes
- 6 cups carrots
- 6 medium onions
- 3 heads garlic cloves (outer skins removed)
- ¼ cup olive oil
- 2 tsps thyme
- 2 tsps oregano
- salt (to taste)
- freshly ground Black pepper (to taste)
Preparation steps

For turkey:

Preheat oven to 325 degrees F.

Clean turkey, removing giblets. Pat dry.

Combine the butter, salt and pepper. Rub the mixture over the outside of the turkey and under the skin.

Bake turkey at 325 degrees F, until meat thermometer reads 180 degrees (about 3 1/2 to 4 hours), basting the turkey occasionally with drippings. Cover loosely with foil if turkey browns to quickly. Allow turkey to rest for 30 minutes before carving. Garnish with freshly snipped chives.

For oven roasted vegetables:

Preheat oven to 400 degrees F. Cut potatoes into 1 1/2 inch cubes. Cut carrots into 2 inch pieces. Cut onions into 1/2 inch wedges. Remove outer skins from garlic.

In roasting pan, toss vegetables with olive oil and herbs, salt and pepper. Roast 1 hour until tender, stirring occasionally.
