- 4 ozs blanched almonds
- 4 ripe Peaches
- 1 small tart Apple
- 2 handfuls mixed Leaf lettuce variety
- 10 ozs Tofu
- 4 Tbsps Walnut oil
- 3 Tbsps balsamic vinegar
- salt
- peppers
Preparation steps
1.
Toast almonds in a frying pan over low heat until fragrant. Remove and set aside.

Rinse peaches, halve, remove pits and slice into thin strips. Peel apple, cut in half, remove seeds and cut into small pieces.
3.
Rinse lettuce and spin dry. Cut tofu into slices.
4.
Mix lettuce with peach slices, apple slices and almonds. Add tofu slices.
5.
For the vinaigrette, mix oil with vinegar and 2-3 tablespoons water. Season with salt and pepper. Drizzle vinaigrette over the salad and serve.
