1 onion (chopped)
1 clove garlic cloves (chopped)
1 stick Celery (chopped)
1 medium potato (peeled and chopped)
1 tsp paprika
2 Tomatoes (chopped)
2 cups vegetable stock (or water)
chopped parsley (to garnish)
4 Tbsps double cream (to garnish)

Preparation steps

1.
Heat the oil in a large pan and gently cook the onion, garlic and celery until soft but not brown.
2.
Add the potatoes and paprika, cook for 2 minutes then add the tomatoes and stock or water. Bring to a boil then simmer gently for 20 minutes.
3.
Season with salt and pepper and serve garnished with the chopped parsley and a swirl of cream.
