0.333 cup Pancetta (thinly sliced, alternatively use bacon)
4 cups canned Tomatoes (chopped)
cup strong Beef stock
1 garlic clove (crushed)
Fresh herbs (to garnish, e. g. basil, broad leaf parsley)

Preparation steps

1.
Heat the butter in a pot on a medium heat. Add the Pancetta and fry until crispy on both sides. Remove and pat dry with kitchen paper.
2.
Add the tomatoes, stock and garlic to the pot and bring to the boil. Then puree finely. Season with salt and ground black pepper pour into bowls. Garnish the soup with the Pancetta and the herbs and serve hot.
