Preparation steps

1.

Rinse the tomatoes and pat dry. Score the skin with a sharp, pointed knife away from the stalk to create six segments (only cut the skin, not too deep!).

2.

Blanch the tomatoes briefly, rinse with cold water and wipe dry. Carefully loosen the skin from each section at a time, pulling down halfway.

3.

Serve the tomato flowers with chopped chives and seasoned with salt and pepper.
