400 grams Pastry flour
½ tsp salt
50 milliliters olive oil

Preparation steps

Preheat oven to 200°C (approximately 400°F).

Mix yeast with 200 ml (approximately 1 cup) of warm water. Mix flour with salt in a bowl. Add dissolved yeast and olive oil. Knead with the dough hook of an electric hand mixer until smooth. Cover and let rest for 45 minutes in a warm place.

Knead dough well on a floured surface. Roll out into 2 circles measuring about 20 cm (approximately 8 inches) in diameter. Place on a baking sheet lined with parchment paper. Use knuckles to create small wells in dough circles and then prick several times with a fork. Brush with olive oil and sprinkle with pepper and sea salt. Place rinsed tomatoes in small wells, cover and let rest for 15 minutes.

Bake in oven for 25 minutes. Serve sprinkled with basil.
