- 1 slice white bread
- salt
- 800 grams ripe Tomatoes
- 2 garlic cloves
- 2 scallions
- 2 tsps Tomato paste
- 400 milliliters cold Tomato juice
- 2 tsps powdered instant Vegetable broth
- 2 Tbsps olive oil
- 1 Tbsp lemon juice
- 2 tsps cane sugar
- cayenne pepper
Preparation steps

Remove crusts and cut bread into cubes. Soak in 4 tablespoons lukewarm water with a little salt.

Blanch tomato, peel, remove seeds and chop.

Peel garlic and chop finely. Rinse, trim and chop the white and light green parts of the scallions. Mix soaked bread, tomato and garlic together with tomato paste, tomato juice and broth. Season with olive oil, lemon juice, sugar, salt and cayenne pepper and refrigerate for about 1 hour. Ladle into bowls and serve with small pieces of cooked lobster, if desired
