150 grams Celery

3 Tbsps olive oil
2 kilograms Tomatoes

Preparation steps

Rinse, trim, and finely dice the scallions, celery, and the tomatoes. Peel and coarsely chop the garlic.

Heat the oil in a pan, then sauté the prepared vegetables. Add 1 cup of water and the bay leaves to the pan. Bring to a boil, stirring constantly. Season to taste with salt, sugar and pepper. Mix the basil into the sauce, and stir until combined. Simmer for 1 hour over low to medium heat, stirring occasionally. Remove the sauce from the heat, and pass through a food mill. Return the sauce to a boil, reduce the heat, and simmer another 10 minutes. Season to taste, then add the sauce to the prepared jars. Seal tightly, and cool completely.
