16 ozs Pasta (spaghetti or penne)
½ cup extra virgin olive oil (divided)
1 large onion (finely chopped)
3 cloves garlic cloves (minced)
1 dried, hot Pepperoncini (chopped; can substitute 1 teaspoon hot red pepper flakes)
4 cups crushed San Marzano tomato
1 tsp dried oregano
salt (to taste)
freshly ground Black pepper (to taste)
2 Tbsps fresh thyme (for garnish)
freshly grated Cheese (if desired)

Preparation steps

In a large pot of salted, boiling water, cook the pasta until al dente or per package instructions.

Meanwhile, heat half of the olive oil in a large skillet over medium heat. Add the onion, garlic and chilies or red pepper flakes and cook until fragrant, or about 3 minutes. Add the crushed tomatoes, oregano and salt. Bring to a boil. Reduce heat and simmer, stirring occasionally, until reduced slightly; about 8 minutes.

Drain the pasta; reserving 1/3 cup of the cooking water. Add the pasta to the skillet and toss well. Stir in the reserved pasta cooking water and the remaining olive oil. Add the thyme, season with salt and pepper,

Transfer the pasta to bowls. Serve hot with freshly grated cheese, if desired..
