4 Tbsps vegetable oil
1 onion (finely chopped)
1 stick Celery (finely chopped)
1 clove garlic cloves (finely chopped)
5 cups Minced Beef
2 tsps dried, mixed Fresh herbs
½ cup Red wine
2 cups canned Tomatoes (chopped)
2 Tbsps Tomato paste
¼ cup butter
0.333 cup flour
3 cups milk
Nutmeg
12 sheets Lasagne noodle (cooked according to the packet instructions)
10 cherry Tomatoes (halved)
½ cup Parmesan (grated)
fresh oregano (to garnish)

Preparation steps

Heat the oil in a large pan and gently cook the onion and celery until soft but not brown. Add the minced beef, let it brown a little then add the mixed herbs and the wine.

Add the tinned tomatoes and tomato paste, season with salt and pepper and simmer the sauce gently for about 40 minutes, stirring from time to time.

Meanwhile, melt the butter in a pan and add the flour. Cook gently for 2 minutes, stirring all the time, then gradually add the milk and cook for about 15 minutes, stirring from time to time. Season with salt, pepper and the nutmeg. Heat the oven to 200ºC (180º fan) 400ºF, Gas 6.

Layer the lasagne sheets with the bolognese sauce into an ovenproof dish, finishing with a sheet of lasagne. Pour over the white sauce, arrange the cocktail tomatoes on top and scatter over the parmesan. Bake in the oven for 20 - 25 minutes or until golden brown and bubbling.
