- 2 ripe Mangoes
- ⅔ cup sugar
- 1 organic lemon (juice)
- 1 tsp Cardamom
- ½ cup Coconut milk
- ½ cup cream (30% fat content)
- 4 Passion fruit
Preparation steps
1.
Peel the mangos. Cut around the pit to remove the fruit flesh. Set one quarter of the flesh aside and slice. Reserve for decoration.
2.
Puree the rest of the mango, sugar, lemon juice, cardamon, coconut milk and cream in a mixer.
3.
Place the mixture into popsicle shaped molds that have been cooled and place in the freezer for at least four hours.
4.
Halve the passion fruits. Scoop out the seeds and flesh.
5.
Dip the molds briefly in hot water to release the ice cream. Place onto plates.
6.
Pour the passion fruit over the top and garnish with the mango slices.
