Ingredients

3 cups organic Baby greens (rinsed and dried)
1 small Red onion (peeled and sliced into rings)
1 red Bell pepper (washed; seeded and sliced)
4 ripe Tomatoes (rinsed and cut into wedges)
10 ozs fresh or frozen Green beans (blanched)
½ cup pitted, black nicoise olive
1 ¼ cups canned Tuna (drained and flaked)
4 fresh eggs (hard boiled; peeled and cut into quarters)
1 can flat Anchovy fillet in oil; drained (optional)
¼ cup fresh parsley (rinsed and chopped)
freshly ground Black pepper (to taste)
For Vinaigrette Dressing
1 small shallot (peeled and minced)
2 tsps Dijon mustard
¼ tsp salt
1 Tbsp lemon juice (fresh squeezed)
1 Tbsp Wine vinegar
½ cup top-quality olive oil
freshly ground Black pepper (to taste)
