600 grams Tuna (sushi grade)
1 handful fresh Spinach
1 Tbsp Sesame seeds
2 Tbsps sesame oil
1 Tbsp butter
2 Tbsps light soy sauce
1 tsp Fish sauce
1 yellow onion
100 grams Glass noodles
1 Dried seaweed sheet
2 sprigs Red basil
1 handful Stinging nettle

Preparation steps

Rinse the spinach and blanch, rinse in cold water, pat dry and spread on a sheet of plastic wrap over an area that is as long as the tuna fillet and 5 times as wide.

Season the tuna fillet with salt and pepper and place on top of the spinach. Peel the onion and cut into half rings. Blanch briefly in boiling water, then sauté in butter and season with fish sauce. Cut the seaweed into thin strips and soak the noodles in warm water for 10 minutes. Drain well, form into little nests and carefully drop in hot frying oil for 30 seconds to 1 minute. Drain on paper towels. Sear the tuna in oil over medium heat briefly and sprinkle with the sesame seeds.

Cut the fish into 1 cm (approximately 1/2 inch) slices. Arrange the rinsed nettle leaves on a plate, drizzle with sesame oil, place the onions and tuna on top and serve garnished with noodles, seaweed and red basil.
